I removed my first response because I pin pointed the problem.  SnagIt 11 and 12 cannot capture Drop down windows with Scroll Bars.
The Image below was created by capturing  the help menu of both SnagIt 11 and 12. I had the same problem as you and found this in the process.

Has this been resolved. I recall being able to capture dropdown menus with previous versions of SnagIt. Found this very useful.

You can create a custom profile using a time delayed capture. You can choose the duration of the delay.
That way you can start the capture process and the timed delay will allow you to open a drop down menu before the actual capture takes place.
You can also enable the timer using a profile that already exists. See Image below, Click to Enlarge.

Hi! Just wanted to stop in to let you know that we have just released a new version of Snagit that has a new capture method called Panoramic Capture! It allows you to capture those pesky scrolling dropdown windows.

Read more about what’s new in this version.

Try out the new version of Snagit for 15 days – download it here.

If you own a license to any earlier version of Snagit on Windows or Mac, you can upgrade to the latest and greatest for only $24.95 USD – see upgrade details here.
