With selection or whole image, select Image > Effects > Filters, and then Grayscale.

EDIT: Oups, just saw that you're on a Mac - sorry, don't know the steps there!

It's fairly similar on mac, here's a screenshot of how you'd do a grayscale:

Thanks for the response. What I had not done is selected the greyscale BEFORE making the selection. I had been creating the capture, selecting it and tried to apply the greyscale. A familiar workflow for me. This was the opposite.
