How about a Quick Access Toolbar?

I would like a Quick Access Toolbar like the one in Excel, Word, PowerPoint, etc.

There are a few things that I use a lot and have to dig them out every time. I regularly use:

  • Fade transition
  • Fade audio in
  • Fade audio out
  • Clip speed
  • Custom animation

This would really help my workflow when I'm making weekly videos that take 6 to 15 hours each.
This really gets frustrating when the options get collapsed under "More."

shift-T will give you a fade transition, if that is the last type you used

shift-A will give you a custom animation keyframe

I don't use shortcuts outside of CTRL-Z, CRTL-V and CTRL-C. And this is a deliberate decision. Those are almost universal.

Most of my life is spent in Excel and PowerPoint. Remembering a bunch of different shortcuts across softwares ... WOAH! I use the mouse and interface.

In the past I've hit the wrong combination of keys and ended up in some bad place that I couldn't un-do from.

I'm with you -- at least if the shortcuts agreed with some of the more common shortcuts used across many video editors it would help reduce confusion.  I've altered the few editable shortcuts in the interface, but that isn't really enough.
I think much of this could be fixed if the program permitted two things:  (1) saving personalized macros; and, (2) setting up a user toolbar with icons.
