Looking at the screenshot that you provided it appears to show that Snagit has the full screen selected; is that not the case?
Retina displays don't show the full 2560x1600 resolution, but rather us high DPI settings to provide a scaled view; if you open the System Preferences on the Mac then go to Display, you will see that there are only a few resolutions able to be set by the operating system; Snagit (and Camtasia) are going to adhere to the resolutions that the OS has selected for the monitor.
I personally use a tool called QuickRes to allow actual resolutions (note, it is a paid application). Using such an application will allow you to bypass the restrictions that Apple has in terms of resolution selection.
I would like to point out that actual Retina resolutions, being massive, appear quite small on-screen (while being massive in size); you can see an example showing both the 1280x800 resolution and the 2560x1600 resolution here (image is far too large to embed here on the Forums).

Retina recording is disabled by default, but you can enable it in Capture preferences by unchecking "Downsample Retina video recordings"
