Using keyframe with a -180 "Y rotation" causes un-desired effect

To add a little pizazz to my project I decided to have my talent come in from a different direction. Easy enough I just choose a -180 on the Y rotation.

Cool... now he comes in from the  right instead of the left. However you can see the wedding ring is now on the wrong finger. "No Biggie"

The last thing I do to my projects is to do some slight key frame movement to keep the audience engaged. I am getting the craziest outcome when I try and key frame a -180 Y rotation

It just starts editing the positions and bouncing the track all over the place.
