I recorded a desktop application demo with no sound for presentation to a large screen in a hall. Size is no limit but I need the highest quality video I can produce. What settings or production options should I use

Hello - Full blown AVI would likely be the preferred output because it preserves the quality. You have the luxury of not sweating file size so no need to use a compression codec to fit somewhere.

Thanks - how about the settings - things like frame rate and such?

It's likely already defaulted to automatic (24 bit color) 30 frame rate of 30. 44K 16 bit stereo WAV audio (depending on your source material). Produce it and see how it looks/ behaves.
